A convection oven, sometimes called
turbo convection
ovens or fan ovens, is a type of oven that has a fan in it to circulate the
heat.
In a lot of ways, a convection oven is a lot like
a conventional oven. The only real difference is the fan. In fact, the fan is in an entirely
different enclosure to keep it away from the intense heat.
The fan usually has plastic parts on it, and
keeping it away from the heat keeps these parts from melting and getting damaged.
The fan helps to blow air around the food, which strips away the
thin layers of air that insulate the food from the heat. This means that convection ovens are actually able to work
at a lower temperature than conventional ovens, but they also cook food quicker at the same time!
A convection oven will also help the food to bake more evenly.
Instead of having the outside get burnt every time, you will find that the food warms more thoroughly in a
convection oven.
There are a couple different kinds of convection ovens in use
nowadays. One of them is the microwave convection oven. This combines the fast cooking speeds of a microwave with
the browning ability of a standard convection oven.
Another type of convection oven is the impingement oven. This is a
type of oven used to cook pizzas in different restaurants. These ovens bring hot air to the food from above and
below, and transfer the food through the heat on a conveyer belt. This results in a much higher heat transfer, and
a very effective cooking time.
Convection ovens are actually very popular right now, both in
commercial and domestic kitchens.
